Molcajetes – Traditional Mortar and Pestle
A molcajete is a stone "bowl" that is traditionally used in Mexico to grind spices, make salsas and to prepare guacamole. Originally made from volcanic rock, they can also be made from concrete and volcanic rock particles.
Molcajetes and tejolotes (the pestle) make great grinding tools because the rough surface is perfect for breaking down spices and herbs, and the surface will remain textured as you use them. Molcajetes should be seasoned, similar to a cast iron skillet. To clean the molcajete, brush the surface with a mildly stiff brush or wipe with a damp paper towel.
Molcajetes also make a decorative serving bowl for salsa, guacamole or sauces. They can be heated in the ovem, and they will keep the contents inside warm for a long period of time.
